I cannot stop eating these chocolate truffles, they’re just so creamy, delicious and addictive! With 69kcal per (rather big) piece, I think it’s more than okay to indulge myself a bit 😌.

This recipe is inspired by Jun & Tonic’s Nama Chocolate, with less ingredients of course, cuz I’m lazy and don’t have a lot of patience 😆. This recipe makes 56 squares, you can actually double the amount and half the calories per bite by cutting it into 112 squares.

INGREDIENTS
(choose organic if possible)
- 500g really good dark chocolate*
- 350g cream
- 30g butter
- 4tbsp cacao powder
INSTRUCTIONS
- Break or chop the chocolate into small bitesized pieces. Melt the chocolate using the double boiler method (bain-marie). In another pot, heat up butter and cream until it starts to steam
- Pour the butter and cream onto the melted chocolate, stir until everything is well combined
- Line a baking tray** with parchment paper, and pour the chocolate mixture into the tray. Spread the mixture evenly and keep the surface smooth. Freeze it for 2-3 hours
- Take the whole block of chocolate out of the freezer and cut it with a HOT KNIFE*** into squares, Jun cut his into 2x2cm, mine is about 4x4cm – size doesn’t matter to me here and I don’t have the patience 😂
- Dust on the cacao powder, and enjoy right away
* The quality of the chocolate will make or break this recipe, so pick one you would enjoy on its own. I used an organic pure chocolate with 70% cacao
** I used a 25x25cm squared baking tray, you can also use a round one
*** a hot knife will ensure a clean cut, you can either heat the knife with a blowtorch or run it over/dip it in hot water and then wipe the moisture off with a towel

It’s been a few years since I last had a Royce’s Nama Chocolate, and now with this homemade version, I can proudly say that I don’t miss Royce’s all that much anymore 😋. My favourite Royce’s Nama is the matcha chocolate, perhaps I will make this again and dust it with matcha powder instead.
You can keep the chocolate in an airtight container in the fridge, but I keep mine in the freezer, it stays quite soft and gives you an ice-cream-ish texture and taste while eating “frozen” ⬇️. I love getting two flavours in one go!
