Orange Egg Tart

I was enjoying a cup of tea when, I suddenly had a craving for something sweet, so I searched my kitchen pantries for a quick relief. Unfortunately, I only had some eggs, oranges and a bag of oatmeal. That’s how these tart bites were born 🤣.

This recipe takes approx. 35 minutes to make and yields 24 small bites, with 41.66 kcal for each bite.

INGREDIENTS (choose organic if possible)

For the bottom:

🌾 Oatmeal: 80g

🍯 Honey: 60g

For the filling:

🥚 Egg: 4

🥄 Vanilla extract: a few drops

🍊 Fresh orange juice: 95g (I used 2 medium sized oranges)

🍊 Orange zest: 1tsp

🍬 Powdered sugar: 10g

INSTRUCTIONS

1️⃣ Grind oatmeal into powder in a blender, add honey and mix well. If the “dough” is too dry, add a bit of water.

2️⃣ Preheat the oven to 180 degrees Celsius, evenly distribute the dough into a nonstick or parchment-lined baking tray (I used a standard bread baking form for this), press the dough gently so it’s even and flat*. Bake at 180 for 10 minutes.

3️⃣ While the tart bottom is baking, in a bowl, mix together the eggs, vanilla extract, sugar, orange juice and orange zest by hand, don’t stir too vigorously.

4️⃣ Take the cake bottom out after 10 minutes and pour the egg mixture on top, bake at 180 for 20 – 25 minutes**.

* You may want to wear a glove or use a plastic bag, cuz things will get a bit sticky 😂.

** Please check after 20 minutes if the tart is ready, adjust baking time if needed, because different ovens perform differently. Mine clearly is hotter on the left side…The top of the tart should look like pasteis de nata and if you insert a toothpick into the filling, the toothpick should come out dry.
