This is the perfect lunch for the autumn season, especially if you like apple pie as much as I do 🥧.

INGREDIENTS (choose organic if possible)
🍎 apple 1 small, approx. 114g, cored and dice
🍯 honey 1.5tbsp, approx. 15g, extra for garnish (optional)
💧 water 50g
🍇 golden raisins 1tbsp 7g
🤎 nutmeg 1 pinch
🤎 cinnamon 1/4 tsp
🍦 Skyr or low fat Greek yoghurt 200g
🎃 pumpkin seeds 10g
INSTRUCTIONS
1. Place diced apple, honey and raisins in a small pot, add 50g water, sprinkle with cinnamon, pinch of nutmeg, cover, and cook over low heat until soft, about 15 minutes*
2. Set aside to cool
3. Put Skyr/Greek yoghurt in a bowl, top with apples and pumpkin seeds, drizzle more honey (optional)
4. Serve immediately
*If there’s still much water left, cook without cover on high heat, stir during the process until water has evaporated
